Ingredients
30 ml (2 tbsp.) Vegetable oil
1 medium onion
15 ml (1 tbsp.) Chili powder
1 L (4 cups) chicken broth
1 can diced tomato 450 ml
1 cup (250 ml) plain tortilla chips, crumbled
Grated cheddar cheese
Sour cream
Cilantro, chopped
Lime quarters
Preparation
Heat the oil in a saucepan over medium-high heat and cook
the onion for about 4 minutes.
Add the chili powder and cook for 30 seconds.
Add the cooked chicken, tomatoes and chicken broth and bring
to a boil.
Reduce heat and simmer, stirring occasionally, for 10
minutes.
To serve, pour soup into bowls, then top with fried tortillas.
Top with grated cheddar cheese, sour cream, chopped
cilantro, lime wedges.
