Preparation
Insert the hook into the mixer. Put the flour and salt and
start kneading at slow speed for 2 minutes.
Add the yeast and knead at slow speed while gradually
incorporating the lukewarm water. Knead for about 3 minutes. Slightly increase
the speed and knead an additional 3/4 minutes. The dough should have a soft yet
slightly sticky consistency.
In the robot's bowl, sprinkle flour all around the dough and
with a horn, take out the dough. Place it on a wooden board and let it rest
under a clean cloth for about 30 minutes so that it relaxes. Then turn it over,
fold the edges towards the center to give it strength, then form a ball and let
stand another 30 minutes under the cloth.
Cut the dough into four equal parts.
Roll up each part by making successive folds and form
sausages.
Arrange the welding of the tubes on the plate side. With the
help of a small sharp knife, make slanted incisions. Leave to rise for about 30
minutes under a cloth.
In the meantime, heat your oven to 230 ° C traditional heat.
Place a baking sheet at the bottom of the oven with a few
ice cubes. Put the baking sheet with the baguettes in the oven, spraying water
with a sprayer just before closing the door.
Bake the baguettes for about 15 minutes until they are well
developed and golden.
Tips and advice for
homemade baguette
For better baguettes, you can buy traditional T65 flour from
your baker. Before putting the baguettes in the oven, you can sprinkle lightly
with flour using a small sieve for a more "rustic" appearance.
For even more delicious baguettes, add crushed dried fruits
(apricots, hazelnuts, almonds, walnuts, prunes, etc.) to the recipe.
If you don't have fresh yeast, you can use dry baker's
yeast. Count 1 sachet (4 to 5 g) for 250 g of flour.
