Ingredients for this recipe

 Material

Strong powder ... 200g

Cake flour ... 40g

Sugar ... 30g

Salt ... 3g

Instant dry yeast… 3g

Milk ... 170g

Condensed milk… 10g

Unsalted butter ... 30g

Milk ... 1 teaspoon

Honey ... 1 teaspoon


Preparation

 ・ Cut the butter into 2 to 3 cm squares and return to room temperature.

・ Keep the milk warm (it can be kept cold during the hot summer months)

・ Mix milk and condensed milk

-Preheat the oven to 190 ° C.

 

Directions

Put everything from strong flour to dry yeast in a bowl and mix briefly.

Add milk and condensed milk, mix and knead.

When it's no longer powdery, add butter and knead further.

When the dough becomes smooth, roll it up, cover it, and ferment it in a warm place.

When it swells 1.5 to 2 times, the primary fermentation is complete.

Remove from the bowl and stretch into a 16 x 36 cm rectangle.

Fold the longer side in three.

Place it on a cutting board, wrap it, and chill it in the refrigerator for about an hour.

Remove the plastic wrap and cut into 18 pieces.

Place them on a baking sheet, with the smooth side facing up.

Combine 1 teaspoon of milk and honey, apply to the surface of the dough, and ferment it in a warm place.

When it is plump, the secondary fermentation is complete.

Apply milk + honey to the surface again.

Bake for 10 minutes in an oven preheated to 190 ° C.

 

Note

If the dough is sticky, lightly dust it (strong flour).

Steps 8-9: If fermentation progresses in the refrigerator and it swells, gently press it with your hands to shape it and then cut it.
