Mediterranean eggplant platter


Today I am sharing an amazing recipe of eggplant, a yummy Mediterranean eggplant platter. In this recipe you can also bake the eggplant or cook it on stove, in both ways it tastes extremely yummy. It is a complete meal, juiciness of salsa complements sautéed veggies, the flavor of garlic and olive oil is really amazing. We use grilled chicken to complete the platter, it complements the veggies and for the people who don’t like veggies more can eat chicken. The kick of fresh garlic and the texture of sautéed veggies is mind blowing. I usually grill chicken and then freeze it, this method is very convenient. Ingredients

For eggplant

  • 1 large eggplant
  • 3 tbsp. oil
  • 2 cloves crushed garlic
  • 1 medium sized zucchini
  • 1 medium sized red onion
  • 1 medium sized red bell pepper
  • 1 tsp. red chili powder
  • 1 tsp. salt
  • 1 tsp. black pepper powder
  • ½ tsp. oregano
  • ½ cup cherry tomatoes

For salsa

  • 1 medium sized tomato
  • 1 green chili
  • 1 garlic clove
  • Handful of cilantro
  • ¼ tsp. salt
  • 1 tbsp. oil

For Serving

  • Pita bread
  • Lemon slice
  • Grilled chicken breast

Method

For eggplant

  • Cut your eggplant in small cubes.
  • Heat your pan at medium high heat; add 2 to 3 tbsp. of oil.
  • Crush 2 cloves of garlic, add it in the oil.
  • Now add your diced eggplant, diced zucchini and diced red onion in the oil.
  • Sautee them well.
  • Add your diced red bell pepper. (If you don’t have red bell pepper you can use any vegetable for red color.)
  • Add your seasonings i.e. salt, red chili powder, black pepper powder and oregano
  • Stir fry your vegetables on medium high flame until they get sautéed but don’t overcook your veggies.
  • Turn the flame off when it is done.
  • After it acquires room temperature add ½ cup of cherry tomatoes, we don’t want them soft we just want that texture.        
  • Dish it out in a plate.

For Salsa

  • Dice 1 medium sized tomato.
  • Chop 1 green chili, handful of cilantro and 1 garlic clove.
  • Chop everything well.
  • Add ¼ tsp. salt in it.
  • Salsa is ready; dish it out in a bowl.
  • Now add 1 tbsp. oil on it and mix well. (I used olive oil; you can use any oil you want.)

Serving

  • In your platter add your eggplant, salsa, pita bread and grilled chicken breast. (It helps to complete the platter.)
  • Slice your lemon and put it on your platter.
  • Voila! Your yummy delicious Mediterranean platter is ready to eat.
