Mexican Quesadillas are really yummy. These are easy to make and best for kids. You can give these quesadillas in the lunch box to your kids. Kids really enjoy them; also these are loved by adults too. You can also freeze the dough of tortilla in zip lock bag and can use it when needed. Share this recipe and try this.
Ingredients
- 2 cups All-purpose flour
- 1 tsp. baking powder
- 1 tsp. salt
- ¼ cup clarified butter (ghee)
- 1 cup Luke warm water
- ½ cheddar and mozzarella cheese
- cooking oil
Method
- Add all-purpose flour, salt, baking powder and clarified butter in a bowl. (Clarified butter must be cold)
- Mix all the dry ingredients and make the dough by adding Luke warm water. (You can also make the dough in machine)
- Knead the dough for 3 to 4 minutes. (Dough must be soft)
- Cover the dough with cling wrap or kitchen towel and leave it for 20 min.
- Heat your cast iron pan on medium heat. (You can also use a frying pan with thick surface; your pan must not be thin)
- Make small balls of your dough.
- Roll your dough balls with a rolling pin. If your dough is sticky then spread flour over it. (While rolling your dough, cover rest of the dough so it may not dry)
- Now cook your tortilla on preheated cast iron pan.
- When it is done, take it off the pan.
- Add cheddar and mozzarella cheese on half of the tortilla and cover it with the other side. ( you can use any cheese of your choice)
- Heat a pan on medium heat; add 1 tsp. of oil in it.
- Add your quesadilla in the pan and cook it from one side.
- Drizzle some oil and flip it, cook it from the other side.
- Cook it till golden brown.
- Cut your quesadilla in tornados and serve them with avocado dip and sour cream dip. ( you can use any dip of your choice)
- Voila! Your yummy easy Mexican quesadillas are ready.
