Ingredients
- 1 lb. ground meat (0.5 kg)
- 1 tsp. salt
- 1 tsp. ginger powder
- 1 tsp. red chili powder
- 1 tsp. chat masala
- 1 tsp. coriander powder
- 1 tsp. garam masala
- 1 tsp. cumin powder
- 1 tsp. crushed red chilies
- 1 tbsp. gram flour
- 1 tsp. corn starch
- ½ cup fried onion
- 1 tbsp. yogurt
- 1 tbsp. ginger paste
- 1 tbsp. garlic paste
- 1 tbsp. green chili paste
- 1 tbsp. papaya paste
- 1 tbsp. lemon juice
- 1 to 2 tbsp. oil
- Medium size onion
- (piece of coal)
Method
- First you have to put a piece of coal on flame to burn.
- Take 1 lb. (0.5 kg) ground meat with fat add it in chopper.
- Add all the spices in the mince.
- For binding add gram flour and corn starch in the mixture.
- Add ½ cup fried onion.
- Add yogurt, ginger paste, garlic paste, green chili and papaya paste and lemon juice in the meat.
- (if you don’t find papaya then add kachri powder instead of papaya paste)
- Mix everything well in the chopper.
- (If you want to skip this step then ask your butcher to finely ground your meat and then add all the spices and mix with hands.)
- Take your ground meat out of the chopper and put it in a bowl.
- To smoke the meat, make a well in the bowl then place a foil bowl in the center and place the burning coal in the foil bowl. Drop a few drops of oil on the coal and cover the bowl with a lid for at least 30 to 40 seconds. It gives a really Smokey flavor to the kebabs.
- Now grease your hands with the oil and start shaping your kebabs, size of the kebabs depends on your choice, you can make it accordingly.
- Preheat your pan on medium low heat, when the pan is heated enough add 1 to 2 tbsp. of oil and start frying your kebabs.
- Drizzle 1 tbsp. of oil on the kebabs.
- Almost after 3 min flip your kebab, before that do not touch or flip because there may be chances of your kebab to break.
- Cook other side till golden brown or till cooked completely.
- Dice a medium sized onion.
- Preheat a cast iron pan; add few drops of oil and sauté an onion.
- Dish out your kebabs in the cast iron pan and serve hot.
- Your delicious gola kebabs are ready!
