Fluffy Soufflé Pancake


Ingredients

2 eggs

1 tbsp. milk

½ tsp. vanilla extract

30g flour

30g sugar

Method

1.       Separate 2 eggs in a bowl, keep egg whites aside.

2.       In a bowl add 2 egg yolks, 1 tbsp. milk, ½ tsp. vanilla extract.

3.       Whisk it well.

4.       Add 30g of flour and ¾ tsp. of baking powder and sift it in the mixture.

5.       Mix it well.

6.       Whisk 2 egg whites.

7.       Add 30g of sugar in the egg whites in 3 batches.

8.       Whip until stiff peaks.

9.       Add ¼ of meringue in the egg yolk mixture and mix.

10.   Add another ¼ of meringue and fold it with spatula.

11.   Add egg yolk mixture in meringue and fold.

12.   Heat oiled pan on low heat.

13.   Scoop 2/3 of batter onto pan.

14.   Add 1 tsp. of water beside each pancake, cover it with lid.

15.   Add rest of the batter onto pancakes, and flip them.

16.   Again cover it with lid and cook for 5 min.

17.   Top the pancakes with butter and powdered sugar.

18    Voilà your yummy fluffy pancakes are ready.
