Ingredients
6 organic eggs
200 g (1/2 lb) sliced hams
200 g (1/2 lb) gruyere cheese, grated
Vegetable oil
Butter
Salt and pepper
Preparation
In a bowl, break the eggs, add salt and pepper , then whip them with a fork
without foaming.
Over low heat, heat a little vegetable oil in a pan, add a
little butter and increase the heat to medium. Swirl the pan to distribute the
fat evenly.
Pour the eggs into the pan. Lower the intensity over low
heat. Using a spatula, bring the cooked eggs to the center of the pan, to allow
the uncooked egg to flow to the edges of the pan. Repeat this process a few
times.
Just before the egg is fully cooked, arrange the ham and
cheese on the center line and bring the sides of the omelet towards the center,
rolling up.
Tilt the pan and roll the omelet on a plate. Season with
pepper and serve.
